Time for a delicious pastry
We celebrated my dad's birthday on Sunday, and what better way to treat him than with something homemade? The cake was a huge hit, so I thought: I have to share this recipe. And yes... it's a semi-healthy version, too. 😉
Ingredients
- 2 medium apples, peeled and chopped
- 2 eggs
- 2 ripe bananas
- 150 g whole wheat flour or oat flour
- 100 g Greek yogurt
- 2 tablespoons honey or maple syrup
- 2 teaspoons baking powder
- 1.5 teaspoon cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt
- Handful of raisins or walnuts, optional
- For the coconut whipped cream: 1 can full-fat coconut milk, refrigerated for at least 12 hours
- 1 to 2 tablespoons of natural sweetener such as honey or maple syrup
- ½ teaspoon vanilla extract, optional
Preparation method
- Preheat the oven to 180°C and line a cake tin or springform pan with baking paper.
- Mash the bananas and mix them with the eggs, yogurt, honey and vanilla extract.
- Add the flour, baking powder, cinnamon and salt and mix until smooth.
- Fold in the apple pieces and, if desired, raisins or walnuts.
- Pour the batter into the pan and bake the cake for 40 to 45 minutes until golden brown and firm.
- Let the cake cool while you make the coconut whipped cream: scoop the thick coconut milk into a bowl and beat it until creamy with the sweetener and vanilla.
- Serve the cake with the coconut whipped cream on top.
