Time for a delicious pastry

We celebrated my dad's birthday on Sunday, and what better way to treat him than with something homemade? The cake was a huge hit, so I thought: I have to share this recipe. And yes... it's a semi-healthy version, too. 😉

Ingredients

  • 2 medium apples, peeled and chopped
  • 2 eggs
  • 2 ripe bananas
  • 150 g whole wheat flour or oat flour
  • 100 g Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 2 teaspoons baking powder
  • 1.5 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Handful of raisins or walnuts, optional
  • For the coconut whipped cream: 1 can full-fat coconut milk, refrigerated for at least 12 hours
  • 1 to 2 tablespoons of natural sweetener such as honey or maple syrup
  • ½ teaspoon vanilla extract, optional

Preparation method

  1. Preheat the oven to 180°C and line a cake tin or springform pan with baking paper.
  2. Mash the bananas and mix them with the eggs, yogurt, honey and vanilla extract.
  3. Add the flour, baking powder, cinnamon and salt and mix until smooth.
  4. Fold in the apple pieces and, if desired, raisins or walnuts.
  5. Pour the batter into the pan and bake the cake for 40 to 45 minutes until golden brown and firm.
  6. Let the cake cool while you make the coconut whipped cream: scoop the thick coconut milk into a bowl and beat it until creamy with the sweetener and vanilla.
  7. Serve the cake with the coconut whipped cream on top.
